It's time to give back

Project Library

This was sent to us by our dear friend Nicole Libschick

Children of The Holy Cross School in Midtown Manhattan have been going to school without having a library. Most of the children come from single parent or underprivileged homes. Up until one week ago, a small group of NY Samaritans showed up and created a two room library for the children to explore and dream. This was created in ONE WEEK!!! A blessing with the help from volunteers, donations and sponsors.

While presently operational, we are still sourcing funding for books, future operational costs and updates to the library. Any amount contributed is greatly appreciated holycrosschurch or by sending a check to Holy Cross Schools: Library Fund.
Our current deadline to meet our $60,000 goal is January 11, 2009

Greetings Lovelies!

What is in a moment? ~
Understanding The Gunas

Someone once told me that all we have is a series of moments and when strung together they make up a life; and that each moment has the possibility to change everything. I was given the opportunity to see this for myself this month.

A dear friend, of many years, invited me for a holiday drink. I accepted, excited for some catching up. It was a beautiful night filled with laughter and stories. The night progressed, a few more words were spoken and this particular string of moments changed us both forever. Indeed it is true that we are changed by every moment. In fact in every breath we can change who we are cell by cell. Nevertheless, some changes are subtle and others more profound.

On this night I was compelled to sit present for all the incredible changes life had to offer, without clinging to any one them. Yoga offers the concept of "The Gunas" (which are "qualities" or ingredients constituent to one's nature) to help us understand this more clearly. Each guna has energy: passion, darkness and balance and all their aspects. They come in an out of our lives like waves, one washing away so the other can come forward. All three are equal in importance and cannot exist without the others. They depend on each other like an inhale counts on the exhale. They are an intricate weave: passion can dip into balance and balance into darkness or any other combination you can image. One moment we are happy and the next tearful. Each moment a new quality, emotion can rush in for us to savor and if we don't hold too tightly it is released into another wave that is there for us to experience.

Like a perfect kiss you can hold it on your lips, but you must release it so that the next can come with other exciting sensations. We can experience and even enjoy the melancholy when it goes, but we must allow its natural ebb and wane, as that is the profound nature of life. Where things get confused in this exchange is when we have clung to one thing or another in an attempt to define ourselves, and almost always this clinging is due to fear. Fear of loss, of annihilation -- ahh another article

For my friend and I ~I am not sure what the future holds. Perhaps this night was a ending or perhaps a new beginning. As for me, I will endeavor to live fully in each moment life offers mT, humbled and knowing that there are things in store that my mind could never imagine! How exciting life really is!!

Yoga Day Fundraiser

The best way to save your soul is to help another. That is what I do when I feel my life coming to get me! I am not sure if Deborah Koenigsberger soul was in jepority but she certianly put herself out there to help others.

Deborah says "The sight of homeless people sleeping in boxes on a cold winter's night with no food, medical attention or companionship became increasingly distressing to me so I decided to do something about it." In 1996, she created Hearts of Gold (HoG). She raised substantial funds for New York City's homeless mothers and their children.

Reflections Yoga has teamed up with HoG and created a Yoga Day Fundraiser to help the mothers and children of our city.

French Ratatouille

Ratatouille is a versatile, hearty vegetable stew that can be eaten on its own, as a side, warmed up or cold.

Serves 8 people
Preparation time: 30 - 45 minutes
Cooking time: 30 - 45 minutes


Ingredients:

  • 1 medium yellow onion, chopped
  • 1 green bell pepper, chopped
  • Optional: 1 red or orange bell pepper, chopped
  • 1 large ripe eggplant, chopped (remove seeds if brown)
  • 1 large zucchini, chopped
  • Optional: 10-15 plain mushrooms, chopped
  • 28 oz. can peeled whole plum tomatoes
  • 1-3 cloves garlic (to taste), peeled and halved
  • 2 tbsp olive oil
  • 3 dried bay leaves
  • Salt & pepper (to taste)
  • Directions for French Ratatouille

    In a large pot, heat up 1 tbsp of olive oil over medium heat. When the oil is heated (but not smoking), add the garlic and let cook until lightly browned. Add the onions and cook until softened (about 2 minutes). Add the green (and red or orange, if applicable) peppers and cook about 2 minutes. Add the second tbsp of olive oil and allow to heat up (about 1 minute). Throw in the eggplant and zucchini and stir, cooking until all the vegetables have softened (about 5 minutes). If using mushrooms, add them now and cook until softened (about 2 minutes). If the vegetables are sticking or drying out at all, turn down the heat and/or add a little olive oil or some vegetable stock to loosen them up so that they do not burn. Once all the vegetables are soft, add the plum tomatoes and stir, breaking up the whole tomatoes with a wooden spoon. Add salt, pepper and bay leaves and let simmer, stirring occasionally, for 30 - 40 minutes. Remove bay leaves once cooking is complete.

    Serve over rice as a main course, on the side with any main course, as a cold snack or with an egg on top for breakfast - and voilà, you've added a little French flair to your winter feasts!
